Tournedo “Saint Valentine”

Necessary products:

Veal fillet – 500 gr.
Salt – 1 gr.
White pepper – 1 gr.
Olive oil – 30 gr.
Rosemary butter – 30 gr.
“Gravy” sauce – 50 gr.
Cream – 30 gr.
Green spices – 2 gr.
“Baby” carrots – 80 gr.
Potato little hearts – 120 gr.
Paste from mushrooms – 50 gr.
Green salad “Frize” – 5 gr.
Fresh broccolis – 60 gr.
Butter – 50 gr.



Preparation:

  1. Slightly browned the veal fillet in the olive oil and the rosemary butter from both sides for about 3 minutes.
  2. Form a big heart in the middle of the plate with the help of the “Gravy” sauce and the cream.
  3. Put the ready tournedo in the middle of the heart.
  4. Garnish with the little carrots and broccolis.
  5. Put the potato hearts, which are already farshed with the paste of mushrooms, in the end of the big heart.
  6. Decorate with salad “Frize” and poppy seeds.
